Well he shielded the 2 last hits before he was dead. And yeah he seems to have low Def but since nobody else tried to shield it's better then nothing :)

Shield then everyone attack Symric or Tarkus and focus him, and then when he has run or died you switch target to next person. OR get to a signpost so he can break, WHILE you shield him on the way.
